Spam Tacos

A pretty twist on the regular taco

Ingredients

12 oz can jalapeno spam

1/2 cup black beans canned, drained and rinsed

1/2 cup corn canned, drained

10 yellow corn taco shells heated

Lettuce shredded

tomato diced

Queso Fresco cheese

Salsa

Sour cream

Guacamole

Directions

In a large skillet, saute spam until lightly browned. Add the black beans and corn and heat until warmed through. Fill the warm taco shells with spam mixture. Top tacos with shredded lettuce, diced tomatoes, and cheese. Serve with salsa, sour cream and guacamole. Have some tortilla chips and make some refried beans to go with.
