Spicy Chicken Soup

A filling and low-carb chicken soup with some Mexican flavors.

Ingredients

2 lb chicken breasts frozen, bite size

1 medium onion chopped

1/4 large head cabbage shredded

2 jalapenos; sliced

4 cups water

1 8- oz cream cheese softened

1 16- oz can tomatoes crushed or petite diced

1 cup salsa

1/4 cup heavy cream

1 Tbsp garlic salt

1 Tbsp ground cumin

salt and pepper to taste

sour cream at the table to taste

shredded cheese at the table, to taste


Directions

Place chicken, onion, cabbage, and jalapeno in the crock pot with 4 cups water. Cook on high for 4 hours (low 6-8 hours) or until chicken is done. Add the remaining ingredients and cook until cream cheese is melted and soup is nice and creamy. Serve with optional shredded cheese, and a dollop of sour cream.
