Spicy Lamb Casserole

Ingredients

2 tb Fresh coriander chopped

2 Garlic crushed

300 g Farmhouse vegetable mix;

1 400-g can tomatoes chopped

375 g Boneless lamb cubed (12oz)

2 ts Cumin

1 Onion chopped

1 tb Mild curry powder

1 tb Vegetable oil

2 ts Garam masala

300 ml Lamb stock (1/2 pint)

Salt

2 tb Tomato puree


Directions

Heat the oil in a large saucepan. Add the onion, garlic and lamb and cook for 5 minutes until browned. Add the spices, cook for 1 minute then add the mixed vegetables, tomatoes, stock, tomato puree, coriander and seasoning. Bring to the boil, cover and simmer for 45 minutes until the lamb is tender. Serve with rice or potatoes. NOTES : A winter warmercan be made using fresh or frozen lamb and any vegetable combination.
