Ingredients

1 tbsp olive oil or virgin coconut oil

2 Onions finely chopped

2 Carrot peeled and diced

4 stalks Celery diced

4 Cloves Garlic minced

1 tbsp Ginger roots

1/2 tsp cracked black peppercorn

1 cup Chicken Stock

3 lbs skinless bone-in chicken thighs(about 12 thighs)

3 tbsp smooth peanut butter

2 tbsp freshly squeezed lemon juice

2 tsp reduced sodium soy sauce

1/2 cup Thai red curry paste

1/2 cup coconut milk

2 cups sweet green peas, thaw if frozen

1 red bell pepper, diced

1/4 cup chopped roasted peanuts

1/2 cup finely chopped cilantro


Directions

1. In a skillet, heat oil over medium heat for 30 seconds. Add onions, carrots and celery and cook , stirring until carrots are softened, about 7 minutes. Add garlic, ginger root and peppercorns and cook, stirring for 1 minute, Add chicken stock and bring to a boil. 2. Arrange chicken over the bottom of the slow cooker stoneware and add vegetable mixture. Cook and cover on Low for 5 hours or on High for 2 1/2 hours, until juices run clear when chicken is pierced by a fork. 3. In a bowl, combine peanut butter, lemon juice, soy sauce and red curry paste. Mix well peas and red pepper and stir well. Cover and cook on High for 20 minutes, until pepper is tender and mixture is hot. Garnish with peanuts and cilantro and server.
