Spinach & Cheese Creamy Wrap

Ingredients

4 ounces Whipped Cream Cheese

3 tablespoons Extra virgin olive oil

1 small Onion diced

1 Red Bell Pepper sliced thin

pinch Salt

1 clove Garlic minced

8 ounces Baby Spinach Leaves cut off stems

pinch Salt & Pepper

2 Green Onions sliced thin

1/4 cup Parmesan Cheese shredded or grated

1/3 cup Feta Cheese crumbled

6 Flour Tortillas

Cooking Spray


Directions

Prepare all vegetables as instructed. Preheat oven to 350. Grease baking dish with cooking spray and set aside. Heat Olive Oil on medium heat in large skillet. Add Peppers, season with Salt and saute for 5 minutes. Add Onions and saute for additional 5 minutes. Stir in Garlic and continue to cook for 30 seconds. Add Spinach and season with Salt and Pepper. Continue to cook for about 3 minutes until Spinach is cooked down. Remove from heat. Place Cream Cheese in bowl. Add cooked Spinach mixture. Stir in Green Onions and both Cheeses; mixing until creamy. Place filling onto each Tortilla and roll up; tucking in ends. Lightly coat each Tortilla with Cooking Spray. Bake for 15 minutes until lightly browned and heated. Cut each roll in half and serve.
