Standing Rib Roast

An Enata favorite for Christmas Eve dinner. Medium rare in the middle to medium on the ends is the goal to please everyone. You peel and quarter potatoes and add to the pan for delicious browned potatoes.

Ingredients

1 pound standing rib roast of beef

Lawry's Seasoned Salt

Garlic Salt or herb seasoning mix

Seasoned pepper or fresh ground pepper


Directions

Season the roast all over as desired. Place in a roasting pan bone side down. Let roast sit at room temperature for 1 hour. Preheat oven to 450 degrees. Roast for 20 minutes. Reduce heat to 350 and roast to desired doneness. Total time (including 1st 20 minutes) about 18 minutes per pound. (2 hours total) Remove from oven and let stand 5 to 10 minutes before carving. This will seal the juices in.
