Steak and Guinness pie

Ingredients

3 Onions sliced

100 grams Mushroom

100 grams Frozen Peas

1 1/2 kg braising steak cubed

2 tablespoons plain flour

350 ml Guiness

350 ml Beef stock

100 grams stilton cheese

25 grams butter melted

puff pastry

Salt & pepper


Directions

Heat oil in pan, add onions, mushrooms and peas. Cover and sweat for about 10 minutes. Remove and set aside. Turn heat up and brown steak in batches, setting aside browned meat. When all ready, return all meat to the pan. Sprinkle in flour for about 2 minutes. Pour in Guiness and stock. Bring to the boil, stirring. Return veg to the pan, replace the lid and simmer for about 1 hour. Remove the lid and simmer for a further hour. Crumble in the cheese over a low heat and stir until melted. Cook for about 5 minutes, stirring. Remove from heat and season. Preheat oven to 200C Roll pastry @ 5mm thick and slightly larger than the ovendish being used. Transfer the meat to the dish, wet the rim of the dish with water and place the pastry on top. Gently press the edges, sealing the rim. Brush the pastry with the melted butter, place on a baking tray and put in oven for about 20 minutes until golden.
