Steak Fajitas

Ingredients

1 Pound Flank steak

1/2 teaspoon Kosher salt

1/4 teaspoon Black pepper

1 Garlic clove Minced or pressed

1 tablespoon Grapeseed oil

1 teaspoon Ground cumin

1 teaspoon Dried oregano

1 Medium yellow onion Thinly sliced (or 1 tsp onion powder)

1 Red bell pepper Thinly sliced

1 Medium zucchini Sliced thinly lengthwise into large matchsticks

1/4 teaspoon Kosher Salt

1/4 teaspoon Black pepper

8 Corn tortillas, 6 inch Warmed

Light sour cream


Directions

Cut steak into thin slices and set aside. In a medium bowl, combine salt and pepper, garlic, oil, cumin, and oregano. Add in steak and toss to coat. Heat a large, nonstick sauté pan over medium/high heat. Once hot add the steak. Cook steak until lightly browned, about 2 minutes. Add in the onion, red pepper, and zucchini, season with salt and pepper. Stir to combine and cook for 3-5 minutes or until the vegetables have softened and the meat is cooked through. Warm tortillas on the stovetop over a low open flame or wrap in a damp towel and microwave for 15-20 seconds. Pile veggies and steak in tortillas and garnish with cilantro and a dollop of sour cream.
