1 large free-range bavette or flank steak (300-350g)

1 tbsp olive oil

1 ripe avocado diced

4-5 radishes finely sliced

Small bunch coriander leaves chopped, stalks finely chopped

30 g unsalted butter

½ tsp smoked paprika
