Sticky Date Pudding

Ingredients

1 cup Water

200 grams Fresh, seeded dates

1 teaspoon Bi-carb soda

60 grams Butter

3/4 cup Sugar

1 teaspoon Vanilla essence

2 Eggs

11/2 cups Self raising flour

300 ml Cream

11/2 cups Brown sugar tightly packed

125 grams Butter chopped


Directions

Lightly grease deep square cake tin, lined with paper. Place water and dates in pan. Bring to boil, remove from heat, add bi-carb. Mix and cool slightly. Beat butter, sugar and vanilla until light and fluffy. Add eggs and beat well. Fold in sifted flours. pour date mixture in and mix well. Pour mixture into tin and bake in moderate oven for 45 mins or until cooked. To make sauce, Combine ingredients in saucepan over low heat. Stir until warm. Pour sauce over pudding and serve with cream and/or ice cream.
