Stove Top Classic One-Dish Chicken Bake with Vegetables

Ingredients

1 2/3 Cups Hot Water

1 package Stove Top Stuffing Mix for Chicken 6 ounces

1 1/2 pounds Chicken breasts boneless and skinless cut into 1 inch pieces

1 can Condensed Cream of Chicken Soup 10 3/4 ounce can

1/3 cup Light sour cream

1 1/2 cups Mozzarella Shredded

1 bag Frozen Mixed Veggies thawed, drained


Directions

1. PREHEAT: oven to 400 degrees. Add hot water to stuffing mix; stir until just moistened. Set aside. 2. PLACE chicken in 13x9 inch baking dish. Mix soup, sour cream, cheese and veggies; spoon over check. Top with prepared stuffing. 3. BAKE 30 minutes or until chicken is cooked through. Makes 6 servings about 1 1/3 cups each.

Ok, so I had to whip up something really quick and i didn't follow all the instructions, so here is my take. I used pretty large frozen vegetables, I'd say thaw them at least partially first. Next I didn't cut my chicken and so it didn't cook all the way through...next time, I'll cut it into bite sized pieces. Otherwise, it was really very tasty and quick.
