Stuffed Clams

Ingredients

1 dozen clams for stuffing 24 clams

1 pound clam meat chopped

1 cup olive oil

3 cloves garlic minced

1/2 onion chopped

1 cup Parmesan cheese grated

3 tablespoons lemon juice

3 tablespoons italian parsley chopped

1/2 pound mushrooms chopped

1 teaspoon black pepper

1/2 teaspoon crushed red pepper

1 cup bread crumbs or enough to hold mixture together

2 tablespoons butter

1 lemon juiced

2 tablespoons white wine


Directions

Steam clams to open, scrape out clams. Chop and set aside. Wash shells. Heat olive oil, add garlic, onion, mushrooms and parsley. Add bread crumbs, cheese, clams, clam juice, lemon juice, black and red pepper, wine. Mix together and stuff half shells with mixture. Melt butter with lemon juice and white wine and sprinkle over clams. Bake covered in 350 degree oven for 10 minutes. Then broil 5 minutes until lightly browned.
