Stuffed Mushrooms

Ingredients

2 boxes large Mushrooms cleaned

6 slices Bacon diced

1 package Cream cheese softened

1/4 Onion diced

1/4 Green bell pepper diced

1/2 cup Parmesan cheese grated

Salt & pepper to taste


Directions

Preheatt oven to 375? Thoroughly clean mushrooms and remove stems (save for stock). Drain well and set aside, Finely dice bacon, onion, and bell pepper. In a small fry pan, saute bell pepper and onion with bacon. When vegetables are tender and bacon crisp, remove from heat. Cool to room temperature and add softened cream cheese, salt and pepper. Stuff mixture into mushroom caps and sprinkle with parmesan cheese. Bake until tops are light golden brown.
