Sweet Potato and Black Bean Chili

One of my rare recipe's without meat, gasp! Must be good right? Another healthy, and delicious way to incorporate sweet potatoes into your food.

Ingredients

4 Teaspoons Extra virgin olive oil

1 Large Sweet Potato Peeled, and diced

2 Tablespoons Chili Powder

2/4th Teaspoon Ground Chipotle Chili

2 2/3rd Cups Chicken Broth

2 Cups Canned diced tomatoes

1 Yellow onion diced

4 Cloves Garlic Peeled and minced/pressed

4 Teaspoons Cumin

1/4th Teaspoon Salt

2 15 oz cans Black Beans drained and rinsed

1 Lime Squeezed


Directions

Instructions: 1. Heat oil in a large saucepan over medium-high heat. 2. Add onion and sweet potato and cook till onion is slightly softened (about 4 minutes). 3. Add garlic, chili powder, cumin, chipotle, and salt and cook, stirring constantly for about 30 seconds. 4. Add chicken broth, bring to a simmer, cover, and reduce heat to maintain a gentle simmer, and cook until the potatoes are tender (10-12 minutes). 5. Add beans, tomatoes, and the lime juice. Increase the heat to high and return to a simmer, stirring often. Reduce heat to maintain a simmer and cook for about 4 minutes.

I used half the amount of chili pepper & cumin & substituted pinto beans for one of the cans of black beans. Also used a dollop of plain yoghurt & chopped cilantro on top.
