Sweet Potato Latkes

Ingredients

1/2 c Raisins; Scant

Nonstick vegetable spray

1/4 c Canola [can use vegetable or

2 tb Flour

1 tb Sugar or to taste

4 Sweet potatoes

3 Eggs; slightly beaten

Salt to taste [can omit]


Directions

source: Philadelphia Inquirer a few Hanukkah ago Peel and finely grate potatoes. In bowl, mix with eggs and flour. Add sugar, salt and raisins. Mixture will be loose. Spray large frying pan. Add oil and fry until lightly browned on both sides. Enjoy!! [My changes/comments in square brackets.] My kids inhaled these. It was a nice and surprising change from "regular" latkes.
