1. Skin and cube your sweet potato into 1" sized pieces.
2. Steam for 10 or so minutes; until tender when stuck with a knife.
3. Mash them up and add the brown sugar, craisins, vanilla, and eggs. Add the eggs last so they don't cook immediately!
4. Pour out into your pie crust and bake at 350 for 45 minutes or until a tooth pick comes out clean.
