Ingredients

1 pound ground beef browned and drained

1 can Rotel Diced Tomatoes and Green Chilies - Mild

1 can fat free refried beans

1 can Black beans 30% less sodium

1 package ranch dressing mix

1 package taco seasoning 30% less sodium

1 can Water

1 cup shredded cheese (fat-free mozzarella-optional)

1 small bag fritos (optional)

4 ounces fat free sour cream (optional)


Directions

Mix all necessary ingredients in a crock pot and cook on low for 4 hours. The cheese, tostitos, and sour cream are all optional toppings to put on the soup after serving. Also, I took out the corn from the original recipe, so if you like corn, a can could be added to this recipe if you like thicker chili/soup. The fritos can be any kind of corn chips, my personal favorite is the Chili Cheese Fritos for this recipe. I also cut down on the calories for this recipe by using fat free sour cream, refried beans, and lower sodium options for the black beans as well as the taco seasoning.

Really easy to make. I used the components per the links suggested instead of store bought. In addition, I added chopped onion, a few cloves of garlic and chopped fresh jalapenos for heat. Incredibly tasty. Will be making this on a regular basis.
