Tempura with Dipping Sauce

Use Japanese Beer instead of soda water for the best flavor.

Ingredients

1 1/2 cups All purpose flour

1 1/2 cups soda water

1 tsp salt

Vegetable oil

1/2 pound fresh green beans

1 large sweet potato

1 large Eggplant

1/2 cup Soy sauce

2 tbsp Rice wine

1 tbsp Granulated sugar

1/2 tsp white vinegar

2 tsp Fresh ginger

1 clove garlic

2 green onions thinly sliced


Directions

Combine flour, beer/soda and salt in medium bowl just until mixed. Do not over-mix! Batter should be thin and lumpy. Set aside 15 minutes to prepare dipping sauce. Heat 1 inch of oil in saucepan to 375F. Dip 10 to 12 green beans in batter, add to oil. Fry until brown. Drain. Repeat with all vegetables, one at a time, without crowding pot. Dipping Sauce Combine Soy sauce, rice wine, sugar and vinegar in saucepan. Cook over med. heat until sugar dissolves. Add ginger and garlic, cook 2 minutes. Add onions and remove from heat. Serve with Rice or Steamed veg.
