Teriyaki Orange Roughy with Stir-Fried Veggies and Rice

Ingredients

2 teaspoons sesame oil divided

1 cup long-grain white rice

1 lb stir-fry combination (vegetables) your favorite, I used asparag

2 tbs Teriyaki sauce

4 6-oz Orange Rough filets


Directions

Start the fish marinating Put rice and 2 cups of water into a 3-quart pot and bring to a boil, cover and reduce to a simmer for 15 minutes or until done. Heat wok and 1 tsp oil over med-high heat and saute vegetables to taste. Meanwhile, heat remain oil in pan. When hot, add orange roughy, cooking about 2 minutes each side. Serve fish over rice and veggies.

Didn't have teriyaki so I mix mirin & soy sauce and minced garlic. For veggies we had mushrooms, green peppers & onions, I use boil in a bag rice(never fails!) very good!!
