Thom Kah Soup

Ingredients

1 lb boneless chicken breast. Cut into bite-sized piece

1 small can water chestnuts

1 C Baby Portabella Mushrooms. Sliced

1 stalk lemongrass. Cut into 1 inch pieces.

4 inch piece of ginger sliced

1/2 lime squeezed

14 oz can chicken broth

14 oz can coconut milk

14 oz can coconut cream

2 1/2 TBSP Sambal Oelek chili paste

1/2 TBSP red curry paste

1 1/2 TBSP fish sauce

1 Heaping TBSP Sugar

1/4 cup fresh cilantro chopped

1/4 cup fresh basil chopped


Directions

Pour chicken stock, coconut milk, coconut cream, in large pot. Put ginger and lemongrass into boiling cloth or cheese cloth, tie and place in liquid. Bring to boil. Add all other ingredients except cilantro and basil. Simmer at very low boil for approx 10 minutes or until chicken is done. Remove from heat and stir in cilantro and basil. Serve. You can leave the cheesecloth floating for more intense flavor with leftovers.
