Three-Cheese Jumbo Shells

My husband loved these shells and he usually prefers the meat-stuffed shells not cheese-stuffed.

Ingredients

3/4 pound ground beef

1/4 pound Chorizo sausage: browned and drained

2/3 cup chopped onion

2 cups water

2 can (6 oz) tomato paste

1 tablespoon beef bouillon base

1 1/2 teaspoons dried oregano

2 cups ricotta cheese

3 cups shredded mozzarella cheese divided

1 cup grated Parmesan cheese

2 eggs, beaten

1 package jumbo pasta shells cooked, drained, and cooled


Directions

1. In a large skillet, cook beef and onion over medium heat until the meat is no longer pink; drain. 2. Stir in water, tomato paste, bouillon and oregano. Cover and simmer for 30 minutes. 3. Meanwhile, in a bowl, combine the ricotta cheese, 2 cups mozzarella, Parmesan cheese and egg; mix well. 4. Stuff shells with the cheese mixture; arrange in a greased shallow baking dish. Spoon meat sauce over shells. 5. Cover and bake at 350? for 30 minutes. 6. Uncover; sprinkle with remaining mozzarella cheese. Bake 3-5 minutes longer or until cheese is melted.
