Heat oven to 200*c
remove the wishbone
Lay the bird on its side and press down firmly until it collapses into a brick shape. (Some snapping may be heard!)
Loosen the breast skin and spread the butter underneath it
Lay bird in a roasting tin leg side down and roast for 30 mins, flip it over and roast for 30 mins more
Turn the oven down to 180*c
Sit bird upright, roast for a further 30-45 minutes, basting frequently until cooked through
