Tuscan White Bean Dip

This spread gets its Tuscan flare from dried tomatoes, rosemary and garlic. Enjoy it with raw vegetables or homemade 100% whole grain pita chips.

Ingredients

1 1/2 cups cooked great northern beans or 1 (15 ounce) can no-salt-added or low -sodium great northern beans, drained

1/4 cup pine nuts or raw almonds

2 cloves garlic minced

1 1/2 tablespoons Dr. Fuhrman's MatoZest (or other no-salt seasoning adjusted to taste)

1 tablespoon Dr. Fuhrman's Black Fig Vinegar or balsamic vinega

1 tablespoon fresh minced rosemary

1/4 cup unsalted unsulfured dried tomatoes soaked in 1/4 cup lukewarm water until soft (about 1-2 hours), then minced, reserve soaking water
