Twice Baked Potatoes

Ingredients

olive oil and sea salt

salt and pepper to taste

6 baking potatoes

1/4 - 1/2 c butter

large scoop sour cream

1/2 c milk or cream

1/2 c shredded cheddar

1/2 package dry Ranch mix optional

Toppings: bacon bits

paprika

diced green onions

1/2 c shredded cheddar


Directions

Preheat oven to 400. Wash potatoes. Rub with oil, sprinkle with sea salt, and poke holes with fork or knife. Bake potatoes 1 hour. Let cool until able to handle. Remove and slice skin off top, and scoop flesh into large bowl. Add 1/2 c cheese, butter, sour cream, Ranch and salt and pepper to bowl and stir. Add milk to bowl and mash all together. Spoon mix into skins. Add toppings and bake 20 mins.
