Twice baked sweet potatoes

Ingredients

3 large sweet potatoes

1/2 cup plain yogurt

1/2 tablespoon pumpkin pie spice

1 tablespoon maple syrup

Pitch of salt

1 cup chopped walnuts (separated into 2 1/2 portions)

2 tablespoons coconut oil

2 tablespoons coconut sugar

1 tablespoon thyme


Directions

1. Preheat oven to 400F, score potatoes with fork and place on baking rack for 20-45 min (until soft) 2. Cut each cooked potato in half, scoop insides into bowl leaving skins in tact 3. Combined: mashed potatoes, yogurt, pumpkin pie spice, 1/2 cup walnuts, maple syrup, thyme, and salt. Scoop back into skins. 4. In a separate bowl: other 1/2 cup walnuts, sugar, and coconut oil. Spread on top of potato's 5. Place potato's back in oven at 400F for 12-15 mins (until tops caramelized )
