Rinse slabs, and pat dry. Rub both sides of ribs with smoky dry rub, pressing to adhere. Wrap each in plastic wrap and chill 8-12 hours.
Preheat oven to 250. Remove plastic wrap and place ribs on a rack on a baking sheet (foil lined). Cook for 3-1/2 hours.
Place each slab in aluminum foil being sure to completely wrap ribs in the foil. Before sealing foil, pour rib braising liquid over ribs. Cook for 1-1/2 hours.
Remove slabs and discard foil and liquid. Generously brush both sides of slabs with sweet and spicy sauce barbecue sauce and place on a rack on a baking sheet. Cook another 20-60 minutes, allowing them to caramelize.
