Vegan Baked Beans

Ingredients

3 cups Kidney beans cooked

1 medium red onion diced

4 each garlic cloves minced

12 ounces Carrot Juice

1/2 teaspoon dry mustard

1 1/2 teaspoon smoked paprika

1/8 teaspoon cloves

1/2 teaspoon tumeric

3 tbsp molasses

1 medium sweet potato diced


Directions

Dice the onion and saute it in a little water or olive oil until translucent. Add the garlic and saute until fragrant. Add the rest of the ingredients, stir well, cover and simmer over low heat about an hour. Uncover and simmer another 20 minutes or so to desired thickness.

I made these beans for the 4th of July and enjoyed them enough, but there are definitely some changes I would make for next time around. The first time I used navy beans instead of kidney, 1/2 a large yellow onion instead of red, regular paprika because I couldn't find smoked, and 3 veggie dogs sliced. The molasses flavor turned out a bit too strong, and the beans could have been sweeter, so I added 2 tablespoons of brown sugar to the remaining batch after about 1 1/2 cups had been eaten. If I do make this recipe again I will stick to my changes and half the molasses in addition to adding 3 tablespoons of brown sugar.
