These beans are a tasty, healthy vegan alternative to traditional baked beans. Try making this dish with Snowcap Beans from Rancho Gordo.
Dice the onion and saute it in a little water or olive oil until translucent. Add the garlic and saute until fragrant. Add the rest of the ingredients, stir well, cover and simmer over low heat about an hour. Uncover and simmer another 20 minutes or so to desired thickness.
