Vegetable and Tofu Skewers

Ingredients

2 packages extra firm tofu

2 tbsp tamari

3 tbsp bbq sauce

6-9 skewers

2 zucchini

1 red bell pepper

1 yellow bell bepper

1 red onion

2 cups cherry tomatoes


Directions

1. Remove water from tofu and cut into cubes. Place in resealable bag. 2. Pour tamari and bbq sauce into bag and shake to coat. Let marinate for 10 to 30 minutes. 3. Thread the tofu and vegetables onto the skewers. 4. Cook for 6 to 12 minutes on stovetop or oven. Each side should turn brown before turning over. 5. Wrap in tinfoil and set in fridge for up to 4 days.
