Vegetable Soup

Ingredients

1 cup Celery

1 cup Onions or Leeks

Olive oil

2 lbs Good quality beef stew Cut in small chunks

2 32 oz. cans San Marazano Tomatoes Chopped or crushed

1 32 oz can Tomato puree

1 box container Beef broth More as needed

Penzey's beef soup base As needed

3 - 4 cups Yukon Gold Potatoes Chopped

2 cups Carrots chopped

1 bag Frozen lima beans

1 bag Frozen Peas

Cooked chicken breasts (can use Boston Market) Shredded or chopped

1 bag Frozen corn

Green Beans


Directions

Saute celery, onions in some olive oil. Add beef. Saute. Add tomatoes, puree, beef broth, and soup base. Simmer a couple of hours. Add potatoes and carrots. Simmer for 10 minutes. Add other vegetables (anything you want) and chicken.
