Ingredients

4 Green pepper

15 ounce black beans rinsed, drained

1 cup pepper jack cheese shredded

1/4 cup salsa

1/2 cup frozen corn thawed

1/2 cup Green onion chopped

1/3 cup Long grain rice uncooked

1 teaspoon chili powder

1/2 teaspoon Ground cumin

Sour cream


Directions

*Cut thin slice off top of each pepper. Carefully remove seeds and membranes, leaving peppers whole. * combine beans, cheese, salsa, corn, green onions, rice, chili powder and cumin in medium bowl; stir to blend, spoon bean mixture evenly into each pepper. place peppers in Crock-pot slow cooker. * cover; cook on low 4-6 hours. serve with source cream if desired
