Veggie Fried Rice

Ingredients

1 cup Uncooked rice

1/2 cup Zucchini Diced

1/2 cup Cherry tomatoes Halved

1/4 can Black beans Rinsed

1/8 cup Vegetable broth

2 Eggs


Directions

- Prep 1 serving of the instant rice - Saute cooked rice with zucchini, tomatoes and black beans - Add vegetable broth and cook 5-7 minutes - Push veggies and rice to outer edges of pan and scramble eggs in center of pan - Serve with optional cheese
