Vidalia Onion Dip (Lower Fat)

Ingredients

1 vidalia onion (diced fine)

1 tbsp olive oil

2 tbsp cream cheese softened

1 cup Low Fat sour cream

1 1/2 tsp rice vinegar

2 tbsp chives finely chopped

2 tsp granulated onion powder

salt and pepper to taste


Directions

In a skillet, heat oil over medium. Add onions; season with salt and pepper. Cook, stirring frequently, until golden brown, 10 to 12 minutes. Let cool. In a bowl, combine onions, sour cream, cream cheese, vinegar, onion powder and chives; adjust seasoning. Chill dip until slightly thickened, about 1 hour; or cover and refrigerate up to 2 days. Serve with potato chips, crackers or bagel chips.

This is just extra input from my previous rating...I finally had rice vinegar on hand and I have to say that I prefer the apple cider vinegar I used previously. Try it, tweak the recipe how you want it, it's delicious! :)

I'm not a Vidalia onion fan, so I've made this twice now with white onions an it is very yummy! Also, I'm one of those people that substitute ingredients where I can. I used veggie oil in place of olive oil, apple cider vinegar in place of rice vinegar, and I never have chives on hand. Still so much fresher tasting than store bought dip!

I didn't care for the vinegar flavor. And the added onion powder overpowered the sweet flavor of the Vidalia.
