Ingredients:
-4 tbsp butter
-1/4 cup flour
-2 cups chicken broth
-2 cups half & half
-1 1/2 tsp Chili Powder
-1 tsp Cumin
-1/2 tsp Salt
-1/2 tsp Pepper
-2 4oz cans diced chilies
-3 15oz cans white beans (Use whatever vou want! | mixed garbanzo, kidney and great northern)
-2 1/2-3 cups shredded chicken
-1 cup pepper jack cheese
Toppings:
-Pepper jack cheese
-Cilantro
-Sour cream
Instructions:
1. Melt your butter on medium high heat in a large pot. Add your flour and whisk well to get rid of any clumps. Slowly add in your chicken broth while whisking away any clumps. Add your half and half and mix well.
2. Cook for 5 minutes until it's thickened a bit.
Then add your spices and mix well.
3. Add in your chilies, beans and chicken. Mix well then add in your cheese. Bring to a light boil then cover and simmer for 10 minutes until thick.
