White Chili

Ingredients

2 cup Chicken cooked and chopped

1 medium Onion chopped

1 clove Garlic minced

1 tablespoon Vegetable oil

2 (15.5 oz) cans Great Northern Beans rinsed and drained

1 (14.5 oz) can Chicken broth

1 (4 oz) can Green chili chopped

1 teaspoon Salt

1/2 teaspoon Ground cumin

1 teaspoon Dried oregano

1/4 teaspoon Pepper

1/8 teaspoon Red (cayenne) pepper

8 oz Sour cream

1/2 cup Whipping cream (or evaporated milk)


Directions

In a large saucepan, saute onion and garlic in oil (if you don''''t have cooked chicken on hand, you can saute 1 pound of boneless skinless chicken breast cubes along with this instead). Add chicken, beans, broth, chilies, and seasonings. Bring to a boil. Reduce heat; simmer uncovered for 30 minutes. Remove from heat; stir in sour cream and cream, if desired for a creamy chili or leave out for a lower fat version. Serve immediately.
