Whole Chicken in a Bag

Ingredients

1 ts Whole thyme

3 lb Whole chicken

juice of 1/2 a lemon

2 tb olive oil

1 Aluminum foil

1 Paper bag, lunch sack size

salt and pepper to taste

1 Cooking parchement paper

2 Garlic crushed


Directions

Prepare a dressing of the oil,garlic,thyme and lemon juice. Rub the bird with this dressing, and add a bit of salt and pepper. Tear off an 18-inch-long piece of parchment paper, and carefully wrap up the chicken. Place the bundle in a paper bag, and then wrap in alumiun foil. Place the bundle on a rack in the oven. Bake at 375 F for 1 hour and 15 minutes.

An hour and 15 didn't cook the bird. Had to carve off raw pieces and pan fry out of sheer embarrassment as my guests were standing there watching saying "it's ok, no big deal." I am sure they were dreading as much as I was to then eat it. And yes, I cooked it in a new convection oven.
