WI White Chicken Chili

This is a quick recipe which makes chili using rotisserie chicken.

Ingredients

1 pound LO Rotisserie chicken Shredded or coarsley chopped

1 medium onion chopped

1 tablespoon vegetable oil

2 8 ounce cans great northern beans rinsed and drained

6 cups chicken broth

1 4 ounce can Green chilies chopped

1 teaspoon salt

1/2 teaspoon pepper

ground coriander

Garlic powder

sour cream

Fresh Cilantro

2 Lime 1 in half for juicing, 1 in 1/8ths

Colby-jack or Monterey Jack Shredded


Directions

In a medium stock pot over medium heat, sauté onion, salt, pepper, coriander and garlic powder in oil until onions are translucent. Juice 2 halves of lime into pot to deglaze, then quickly add broth and bring to a boil. After boiling for 2-3 minutes, reduce heat and simmer uncovered for 30 minutes. Mash beans and add chicken and chilies. Simmer for 10-15 minutes to thicken. Remove from the heat and serve. Top with shredded cheese, a dollop of sour cream. Serve with chopped cilantro and a wedge of lime.
