Zucchini Fritters

These have such a great flavor almost like dill potato chips or some really great french fries!

Ingredients

2 small Zucchini

2 teaspoon Salt

4 medium Scallion minced

1/4 cup Parsley chopped

1/4 cup Dill chopped

1 large Egg beaten

3/4 cup Parmesan grated

1/4 cup Flour


Directions

- Grate zucchini into colander in the sink - Toss with salt and let sit 10 min - Squeeze out liquid. - Mix Scallions, Parsley, Dill, Egg, Parmesan and flour - Pan fry in olive oil medium high by spoonfulls flattening 5-6 min per side or till dark brown - Drain on paper towels and season with salt.

These fritters are delicious! I didn't have dill but I'm looking forward to making them again and I'll be prepared! Great along thinly sliced oven roasted potatoes, garden salad and grilled bread! I used a little less salt. Thanks for posting!
