Ingredients

3 medium sliced into strips

500 gm Ground beef

340 gm mozzarello light cheese shredded (Italiano)

375 gm 1% cottage cheese

1 medium Bell pepper

250 gm mushrooms sliced

125 gm carrot chopped

1/2 large Yellow onion chopped

540 ml Diced tomatoes canned

213 ml tomato sauce

15 ml garlic powder (or 2 ground cloves)

156 ml tomato paste

15 ml montreal steak spice

Salt

30 ml Basil

30 ml Dried oregano

15 ml Chili powder

15 ml Worcestershire sauce


Directions

1. Slice zucchini into thin strips and lay on cutting board. Salt each strip (helps remove water and soften) 2. brown beef in oil with onions. Add mushrooms, tomatoes, tomato paste/sauce, sugar, spices and all vegetables except zucchini 3 rinse off zucchini strips and lay half into base of greased 9x12 pan 4. Place layer of beef sauce, then half cottage cheese and half shredded cheese. Add another row of zucchini and Repeat layers 5. Bake at 350 F for 40 min then let sit 10 min before serving
