Zucchini Squares

This is a super quick & simple appetizer, side dish or even a meal all by it's self! Great to help use up all the zucchini from the garden.

Ingredients

3 cups Zucchini thinly sliced

1 1/2 cups Bisquick mix

1/2 cup Onions finely chopped

1/2 cup Parmesan cheese grated

2 tablespoons Fresh parsley chopped

1/2 teaspoon Salt

1/2 teaspoon Seasoned Salt

1/2 teaspoon Fresh Oregano

1/8 teaspoon Black Pepper

1 clove Fresh Garlic minced

1/2 cup Vegetable oil

4 Eggs beaten

1 pound Ground Italian Sausage cooked

1 cup Mozzarella Cheese shredded


Directions

1) Preheat oven to 350 degrees. Grease bottom & sides of a 13x9x2 pan. 2) Stir all ingredients, except mozzarella, together to form a batter and spread in the pan. 3) Bake about 25 minutes or until lightly browned. Remove and top with mozzarella shreds and return to oven for a few minutes longer to melt and brown. 4) Remove from oven and let cool 5 minutes. Cut into 12 squares.

This is so yummy and quick to make! Kids and husband loved it! This is a great appetizer to serve during football games, but also pretty enough and light to serve at a baby or wedding shower too! Love this recipe!!
