Salad of Asparagus And Prawn with Black Truffle Oil Dressin Ingredients

5 lg Peeled raw prawns per person ; or selected
6 Freshly cooked asparagus ; (special selection
; stems per person ; range)
2 Red cherry tomatoes; halved Half squeezed fresh lemon
Selection of salad leaves in 30 ml Balsamic vinegar
; or oak leaf Seasalt to taste
FOR THE DRESSING Freshly ground black pepper
100 ml Black truffle oil; (good

Instructions for Salad of Asparagus And Prawn with Black Truffle Oil Dressin

1 Cook the prawns lightly after seasoning in olive oil and butter, until tender and cool on absorbent paper. After peeling the asparagus, cook in boiling salted water until tender, drain, cool and cut heads and middle stem. 2 Whisk all the dressing ingredients together.
