Anne's Apricot Chicken a l'Orange

Sweet and moist and tender. This would be good with just about any chicken parts you like. I used boneless and skinless breasts.

Ingredients

  • 1 1/2 pounds Chicken breasts boneless and skinless
  • 8 ounces Italian dressing
  • 1 envelope Recipe Secrets onion soup mix
  • 1/2 cup Water
  • 1 11 ounce jar Apricot preserves
  • 1 11 ounce can Mandarin Oranges in light syrup -do not drain

Preparation

.Combine all ingredients except for chicken.

Place chicken in a large casserole dish. Pour marinade over chicken and marinate for at least two to three hours.

Preheat oven to 350 degrees.

Bake for one hour covered. Uncover and continue baking until chicken browns.

Serve over rice.

I use apricot pineapple preserves and leave out the mandarin oranges. It tastes fabulous. I make this for my husband's poker nights and also for family dinners, serve it over white rice and I never have leftovers. Five star recipe.

A superb dish that is definitely company worthy. I used skinless, boneless chicken thighs in this easy to make recipe. It turned out moist and absolutely delicious! I really enjoyed the flavor combination of the apricot jam and mandarin oranges in this dish...so much so, that I plan to use this recipe as the base for a sweet and sour version in the future.
