1. Coat the bottom and sides of a 9 inch pie plate with the tablespoon butter. Sprinkle the crumbs on the plate, then rotate the plate until they cover the entire bottom and sides. This will form the crust.
2. Place the potatoesin a medium-size saucepan and cover with water. Bring to a boil, then lower the heat to a simmer. Cook the potatoes until tender, about 10 minutes. Drain well and place in a large bowl.
3. Wash the Swiss chard or spinach and place in a colander. Sprinkle the salt all over the
leaves and let sit for 30 minutes; this wilI cause the juices to "sweat." With your hands gather
the leaves into a ball and squeeze out all the juices. Chop the leaves roughly and add them
to the potatoes. Mix in all the remaining ingredients.
4, Preheat the oven to 375 degrees.
5. Place the greens mixture in the prepared pie plate. Bake 40 minutes, or until a knife
inserted in the center of the pie comes out clean. Let sit 10 minutes before serving.
