Ingredients

  • 4 ounces Plain flour
  • 1 ounces Butter frozen then grated
  • 1 ounces Lard
  • 1/2 ounce Sugar
  • 1 tablespoons Handy egg + 1 1/4 fl oz per tbsp or 22ml or 1 1/2tbsp per tbsp of egg
  • 4 tablespoons Water very, very cold

Preparation

Place flour and sugar in bowl, add butter then lard and rub in lightly.

The mix should look like fine breadcrumbs.

Now, for a rich pastry, use Handy egg and approx 3 tablespoons of water- for a plainer pastry use just 2 tablespoons of water. The water should be very cold. Best to put not enough water than too much into the mixture, so be careful as you add. Mix with a knife and then use fingertips to bring the dough together. You shouldn't need to chill this pastry before rolling out.

Cook in preheated oven 175?C for 15 minutes in my fan assisted oven.
