Fillet and Pound Chicken to 1/4 inch thick, sprinkle with pepper
Top with 2-3 slices of Prosciutto,spread pesto over ham and add sundried tomatoe strips
Fold in half and secure with toothpicks
Brown in olive oil in dutch oven over medium heat
Remove and deglaze pan with chicken stock; add wine and simmer 5 minutes; add roasted peppers and chicken cover and cook until done 15-20 minutes.
