6 Sweet potatoes
1 poundCarrots
1 cuppitted prunes; cut in half
1 cupdried apricots; cut in half
2 cupswater; boiled
5 1/2 cupsOrange juice
1 Lemon, Juice of
1 canpineapple chunks; drained
1/4 cupdark brown sugar
1/2 teaspoonCinnamon
1/4 teaspoonGinger
1/4 teaspoonNutmeg
1/4 cupVegetable oil

Tzimmes Preparation

Cut prunes and apricots in half and put in boiled water for ten minutes.

Generously oil a heavy pan.

Peel sweet potatoes and cut into chunks and place in oiled pan along with sliced carrots. Drain the prunes and apricots (save water) and add to the pan. In a small bowl, mix the orange juice, lemon juice, pineapple juice, spices and dark brown sugar. Cover and bake at 350 degrees for 1 hour. Check often and add the drained liquid from the prunes/apricots if the liquid evaporates. Bake uncovered for 15 minutes.
