An Excellent and Quick Appetizer for Friends and Family

"Made this on a day off from work for my husband. He absolutely loved them, and couldn't stop saying how much he appreciated me making them! I had more of a pinwheel presentation in my mind, which doesn't really work, and uses too much of the filling. But they are just as cute as the typical roll-up, and a little neater." - gbookwormm

Original recipe makes 4
8 thin slicesham
2 slicesbacon; crisp-cooked, drained, crumbled
1/4 cupMayonnaise
1 teaspoonDijon-style mustard
2 Eggs; hard-cooked, chopped
1/2 smallavocado; chopped
1 roma tomato; seeded and chopped
2 ouncesblue cheese; crumbled

Cobb Salad Ham Roll-ups Preparation

Combine mayonnaise and mustard in a medium bowl. Fold in eggs, avocado, tomato, blue cheese and bacon until combined. Set aside.

Layer each ham slice with some of the lettuce. Place a heaping tablespoon of the egg mixture at one end of each slice. Starting at the end with the filling, roll up each ham slice. Secure with a wooden pick.

It was just too wet with the lettuce.

This was OK the first day and not so great the next day. The lettuce made eveything wet, and the avacado got very dark
