An Excellent and Quick Appetizer for Friends and Family
"Made this on a day off from work for my husband. He absolutely loved them, and couldn't stop saying how much he appreciated me making them! I had more of a pinwheel presentation in my mind, which doesn't really work, and uses too much of the filling. | 8 thin slicesham |
| 2 slicesbacon; crisp-cooked, drained, crumbled |
| 1/4 cupMayonnaise |
| 1 teaspoonDijon-style mustard |
| 2 Eggs; hard-cooked, chopped |
| 1/2 smallavocado; chopped |
| 1 roma tomato; seeded and chopped |
| 2 ouncesblue cheese; crumbled |
Cobb Salad Ham Roll-ups Preparation
Combine mayonnaise and mustard in a medium bowl. Fold in eggs, avocado, tomato, blue cheese and bacon until combined. Set aside.
Layer each ham slice with some of the lettuce. Place a heaping tablespoon of the egg mixture at one end of each slice. Starting at the end with the filling, roll up each ham slice. Secure with a wooden pick.
