Favorite flavors of the Mediterranean come alive in this gyros-inspired sandwich.

Original recipe makes 4
1 poundboneless pork loin
4 tablespoonsolive oil
1 tablespoonDijon-style mustard
1/2 cupLemon juice
2 clovesgarlic; crushed
1 teaspoonOregano
1 cupplain low fat yogurt
1 cucumber; peeled, seeded and chopped
1/2 teaspoongarlic pepper
1/2 teaspoondill
2 pita loaves; halved
1/2 smallred onion; thinly sliced

Gyros-Style Pork Sandwich Preparation

Cut pork crosswise into think slices; then into strips 5x1/2-inch. Place in self-sealing bag. Combine olive oil, mustard, lemon juice, garlic and oregano; pour over pork. Cover and refrigerate 1-8 hours.

Meanwhile, in small bowl stir together yogurt, cucumber, pepper and dill. Cover and refrigerate.

Heat oven to 450 degrees F. Drain marinade from pork, discarding marinade. Place pork in single layer in shallow pan. Roast until crisp, about 10 minutes. Open each pita half to form a pocket. Distribute pork among each half. Top each sandwich with some yogurt dressing and onions.

not very good. We bought pitas that were whole wheat and ended up not eating that part. But other wise the sauce tasted bad and the meat was the best part, maybe too much lemon flavor. I would use less lemon juice IF I were to make it again. Not even close to being Gyros-Style. I used to work in a restaraunt that sold gyros and this was not even a likeness to it.

Pretty good! Instead of the sauce in the recipe, I served it with the tzatziki sauce recipe http://www.bigoven.com/recipe21191. Nice.
