4 3/4pork rib or loin chops; bone-in
1 1/2 cupsmild chunky salsa
1 cupPortobello mushrooms; chopped
1 cupCheddar cheese; shredded
2 tablespoonsMaple syrup
1/4 cupfresh parsley; snipped

Portobello Pork Chops Preparation

Heat oven to 375F. Trim fat from chops.

Spoon salsa into a 3-quart rectangular baking dish. Arrange chops on top of salsa. Combine Portobello mushrooms, cheddar cheese and maple syrup in a medium bowl. Spoon over chops. Bake, uncovered, for 25 to 30 minutes. Sprinkle with parsley. Serve chops with salsa mixture.

This was pretty good, but I'd either skip the maple syrup or cut it in half next time.

This is an excellent dish and who would have thought maple syrup and cheese over salsa?? My chops were too thick to cook for just 30 minutes, but upping the time to an hour worked just fine. I had to use canned mushrooms and had no parsely. This is a great dish. I fixed it with 'Brussels Sprouts with Walnuts' recipe. Nice combination.
