Found in response to a request for a bread machine recipe for Ciabatta Bread. I love this stuff. It is one of the best breads I make!

"Wonderful results! A bit scary getting there. Dough is VERY sticky and wet, but I didn't add to it. I had to make blobs for loaves, and dimpling didn't really happen (it was more like sticking my fingers in and stuff sticking to them), but they were GREAT! We sliced it, and turned it over, brushed w/ oil, put spices on it and toasted it. Wonderful. I'll make it every week." - racheldillin

1 1/2 cupsWater
1 1/2 teaspoonsSalt
1 teaspoonSugar
1 tablespoonolive oil
3 1/4 cupsFlour; (4.06 cups of spelt)
1 1/2 teaspoonsYeast

Ciabatta Bread Recipe Preparation

Place ingredients into the pan of the bread machine in the order suggested by the manufacturer. Select the Dough cycle, and Start. Dough will be quite sticky and wet once cycle is completed, resist the temptation to add more flour. Place dough on a lightly floured board, cover with a large bowl, and let rest for 15 minutes. Lightly flour or use parchment lined baking sheets. Divide into 2 pieces, and form each into a 13x14 inch oval. Place loaves on prepared sheets, dimple surface, and lightly flour. Cover, and let rise in a draft free place for approximately 45 minutes. Preheat oven to 425 degres F. Dimple dough for a second time, and then place loaves in the oven, positioned on the middle rack. Bake for 25 to 30 minutes. During baking, spritz loaves with water every 5 to 10 minutes for a crispier crust.

My oven runs hot so I would bake this at 375 for 20-25 minutes, and I only used 3 C flour. Maybe 425 would work with yours. I let it rise about 1 hour, it was quite nicely crusty without misting. That being said, this is one of my favorites, and very simple and rustic.

What setting on my bread makers should I use for this bread?

I was so disappointed. The dough stayed so soft and thin that I could not even dimple it after letting it rest and it never did rise. The dough would stick to my finger and create peaks. I followed the recipe exactly, including the use of fresh yeast. This recipe reads very similar to starter for other Ciabatta breads. Could there be more to the recipe? I would be willing to try again if this was the starter.
